This morning I woke up in a great mood, totally ready to enjoy my Sunday. After taking time to appreciate the beautiful pre-snow weather during a looooonnng walk with Pedro, I made myself a delicious fall breakfast treat. I found a recipe for Apple Cinnamon Quinoa from The Healthy Everythingtarian during a search for healthy breakfast recipes to add variety to my daily oatmeal routine. I usually don't have enough time to prepare a nice breakfast during the week, so I took full advantage of my day off to try out the fall quinoa. I was super pleased with the results. The recipe was easy, tasty, and used easily accessible ingredients. The recipe makes two servings, and I had fully intended on saving the other half to eat tomorrow at work. When I was a JV my housemates did EVERYTHING with oatmeal. I wish I could give you some ideas, but they did most of the cooking. We used to buy 25+ pound bags, it did take a while to go through though. Recently my mom was looking for oats to make apple crisp & we were out. I was shocked, until my mom reminded me I wasn't a JV anymore. Your comment will be posted after it is approved.
